Sweet Potato Chips with Kale and Goat Cheese
These sweet potato chips get an upgrade with sautéed kale, creamy goat cheese and just the right amount of sweetness from the honey. Serve them as an appetizer for friends and family!

Ingredients:
• 2 tbsp honey
• 3 sweet potatoes
• 3 tbsp olive oil
• 1/2 tsp cayenne pepper
• 1 clove garlic
• 3 cups fresh kale
• 1/2 cup crumbled goat cheese
• salt and pepper, to taste
Directions:
Wash sweet potatoes to remove dirt.
Slice sweet potatoes into chips.
In a medium bowl, add sweet potatoes and drizzle with olive oil, salt, pepper and cayenne pepper. Using your hands, gently toss the sweet potatoes until they are all coated with the oil and spices.
On a baking sheet (you might need 2) lay sweet potatoes flat in a single layer.
Bake at 375° for 25-30 minutes, flipping once.
While chips are baking, add oil to a skillet over medium heat.
Add washed kale, salt, pepper and minced garlic to the skillet and sautee until soft and tender.
If you have a log of goat cheese, make crumbles.
Assemble chips with kale and goat cheese on top.
Drizzle with honey.
